It's 2010 and I'm convinced that it's going to be a fabulous year for us!! I started off the New Year cooking my way through Ina and CIA cookbooks. I hosted NYE day at my home to ring in the New Year with my family and celebrate my Moms Birthday. We normally spend NYE with her and my siblings but this year we changed things up a bit (my husband and I attended a friends NYE party and brother was hosting a friend for dinner), so NYE Day was the new plan. I got up at 9am on Jan 1st, 2010 and started my cooking experience. I was determined to cook two recipes that I had been eying for sometime now (complicated, not really but intimated YES). The recipes I set out to accomplish for New Year Day dinner were; Chicken Pot Pie and New England/East Hampton's Clam Chowder and finish up the meal with a succulent Pork Tenderloin. After slaving in the Kitchen for 6 hours I accomplished all three recipes with much success. The Clam Chowder was a huge hit (each person had at least 2 or 3 helpings leaving us without leftovers....). I made a double batch of the Chicken Pot Pie so we've got left overs for the week (that helps when you're in a pinch and need a quick meal solution). You can always freeze the leftovers and keep them for another night. If you are thinking 6 hours in a kitchen for a meal...that's crazy, well yes it seems like a lot of time but it's really not that bad considering all that I accomplished. Here is a tip: chop and prepare the vegetables the night before (put the pre-cut measured veggies into zip lock bags and label them appropriately for each recipe). If you take advantage of these tips you cooking time should be cut in half (the prep time you do ahead the better).
